This light and spongy gluten-free brownie is made using Bob’s Red Mill Gluten-free 1-1 Baking Flour. We have been using this gluten-free baking mix lately, testing it out in different recipes and we find that it works well, the whole family loves it and to top it off it is made with high quality ingredients.  It really does make it easy to convert any recipe into a gluten-free version.

I sweetened the brownie using Xylitol, a low glycemic sweetener. Xylitol is a sugar alcohol that doesn’t raise blood sugar levels and it has several therapeutic benefits, including acting as a prebiotic to feed the good bacteria in the gut. I use xylitol in moderation when baking and rotate it with other natural sweeteners like coconut sugar and brown rice malt syrup. I find that it makes a great alternative to use from time to time.

Please also note that xylitol is highly toxic to dogs. We have a golden retriever and whenever I bake something that includes xylitol I make sure the girls are careful and don’t leave any crumbs around for the dog. Although I find it easy to avoid this by including xylitol-baked goods in the school lunchbox only, that way they aren’t eating it at home.

However, this brownie also works very well with coconut sugar so feel free to replace the xylitol with your own natural sweetener.

Gluten-free Brownie

Ingredients

100g Bob’s Red Mill Gluten-free 1-1 Baking Flour
1/2 cup of xylitol or coconut sugar
1/4 teaspoon salt
1/4 cup cocoa
120g butter, softened
2 eggs
1 teaspoon vanilla

  • Preheat oven to 180 degrees
  • Grease a square or circular 8 inch pan
  • Beat together butter, eggs, vanilla and xylitol or coconut sugar
  • Sift flour with salt and cocoa in a separate bowl
  • Add dry ingredients to the butter mixture and beat or hand mix until thoroughly blended
  • Pour into pan and spread out evenly
  • Bake for approximately 20 minutes
  • Optional: cool and dust with powdered xylitol
