This coriander coleslaw has a creamy, tangy dressing. A clean eating recipe that is easy to make plus it goes well with so many dishes that you can make it all year round. This recipe comes from my eldest daughter, it’s her speciality, so get the kids in the kitchen helping you with dinner tonight!  We like to serve this alongside roast chicken, fish fingers, panfried fish and inside wraps for lunch.

Ingredients
1/8 – 1/4 head of purple cabbage
1/8 – 1/4 head of green cabbage
1 large carrot
1 finely chopped red onion
Freshly chopped coriander

Mayonnaise Dressing (my daughter’s secret recipe 😉 )
Mix together the following:
2 dessertspoons of good quality mayonnaise (we use Sabato)
1 capful of organic apple cider vinegar
1/4 teaspoon of wholegrain mustard
Salt and pepper to taste

  • Finely chop the purple and green cabbage and place in a large mixing bowl
  • Grate the carrot and add to the cabbage mix
  • Chop a large bunch of coriander and mix through the other ingredients well
  • Finally, add the mayonnaise dressing, distributing evenly throughout the whole mixture
  • This keeps nicely in the fridge and tastes even better the next day :-)
